11:00 PMEven Florida is not immune to the cooler weather that is sweeping the nation. Tomorrow we only have highs in the upper 50's, which I know for most of you is not cold, but for a native Floridian, it is pretty chilly. When weather turns cooler, I start turning to my comfort food favorites from my childhood to keep the whole family warm and toasty inside and out. I stopped in my local Walmart the other day to pick up some Smithfield All Natural Boneless Pork Chops so that I could recreate a wholesome dish my mom used to make when I was growing up, simmered BBQ pork chops.
There are so many things to like about the Smithfield Pork Products. For one, they are all natural US born and bred animals, and their products meet the USDA Process Verified Standard. They don't add hormones, steroids or use artificial ingredients in their Pork Products either. Plus, they are affordable, unlike many other all-natural products on the market. They always have great cuts, color and above all else, flavor. Plus, it is nice to know I am supporting a company that is supporting the community. Let's just say, that when I have four boys, I had no idea how much food they would eventually consume. Let's just say that I had to buy nearly 3 pounds of Smithfield All Natural Boneless Pork Chops, and there still weren't any leftovers. These simmered BBQ pork chops are super easy to make, so delicious even the pickiest eaters will gobble them up and they bring back fond memories of my childhood.
BBQ Pork Chop Simmer
Ingredients:
Smithfield All Natural Boneless Pork Chops
Ketchup
BBQ Sauce
Sliced Sweet Onion
Instructions:
Step 1: Heat a cast iron or non-stick skillet on high with about 2 tbsp. of oil in the bottom.
Step 2: Sear the Smithfield All Natural Boneless Pork Chops on each side long enough to lock in some great color.
Step 3: Add the sliced sweet onions to the skillet and continue to cook on medium-high heat for a few more minutes.
Step 4: Mix together equal parts of ketchup and BBQ sauce in a bowl. You can add in some water to thin the mixture a bit if you like.
Step 5: Add the sauce to the skillet, reduce heat to Medium-low, cover and simmer for 15-25 minutes until the pork is cooked through.
Step 6: Serve over rice.
