Steamed Pumpkin Crockpot Cake #Recipe
2:18 PMI have this nasty habit of burning desserts. I get busy doing something and I forget about what's in the oven every single time. My boys have come to expect well toasted cookies and cakes throughout the years. A few years ago though, I fell in love with my Crockpot, and have been making monthly Crockpot meal menus for a while now. So, I figured, why not start making dessert in the Crockpot too. I'm telling you, it is virtually full proof, and this steamed pumpkin Crockpot cake is probably the moistest cake I have ever tasted. Don't believe me, give it a try for yourself!
Ingredients:
1 1/2 c. flour
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1/4 tsp ground cloves
1/4 tsp nutmeg
1 stick melted butter
2 c. brown sugar
3 eggs
1 can 100% pumpkin
Instructions:
Step 1: Mix together all of the dry ingredients in a bowl together.
Step 2: Whisk together butter, brown sugar and eggs in a bowl until blended well. Then, add the can of pumpkin and mix well.
Step 3: Stir together the wet and dry ingredients until they are blended well and no lumps remain.
Step 4: Place the mixture into a casserole dish or bowl that is at least 2 1/2 quarts and can fit into your Crockpot comfortably.
Step 5: Place the bowl with the mixture into the Crockpot and then place 1-2 inches of hot water in the bottom of the Crockpot around the bottom of the bowl. This forms a sort of dutch oven.
Step 6: Place the lid on your Crockpot and cook on high for 3 1/2 hours or until a skewer or knife comes out clean from the center.
