Deluxe Ham and Potato Crockpot Casserole #Recipe
8:48 AMOne thing I love about Crockpot cooking is coming across new recipes to try out. A while back I came across an old Crockpot meal magazine at a garage sale, and I have had fun adapting the recipes and trying them out. This Deluxe Ham and Potato Crockpot Casserole may not look like much, but it is the epitome of cheesy delicious comfort food. Best thing about it? The boys all loved it, so it is going in our permanent recipe list to make again in the future.
Ingredients:
1 lb. cubed ham
8 oz. sour cream
1 can cream of potato soup
1/2 a chopped onion
1/4 + 3 tbsp. melted butter
2-3 lbs. red potatoes diced
1 tsp. salt
8 oz. shredded cheddar cheese
2 c. boxed stuffing mix
Instructions:
Step 1: Mix together sour cream, soup, onion, salt and the 1/4 cup of melted butter in a separate bowl.
Step 2: Place the diced potatoes along with the cubed ham and cheese in the bottom of the Crockpot.
Step 3: Pour the soup mixture over the potato and ham mixture, and mix together.
Step 4: Place the 2 cups of stuffing on top of the potato and ham mixture in the Crockpot, and sprinkle with the remaining 3 tbsp. of melted butter.
Step 5: Cook on high for 5-6 hours or low for 8-10.
If you choose to make this into a freezer to Crockpot meal, you can freeze the soup mixture by itself. I would recommend adding the cheese, diced potatoes and ham at the time of cooking.

ReplyDeleteYou could leave the meat out all together, or you might consider something like turkey sausage, I think that could lend a really good flavor to the dish.

ReplyDeleteIn the Fall and Winter I do almost all our dinners in the Crockpot. This is just such a busy time of the year, that it really helps cut down on my time in the kitchen and the amount of money we would spend eating out.
