Spicy Cajun Style Omelette #Recipe #TexasPete

My time in Louisiana a few weeks ago taught me more than just the history of the area and the difference between Cajun and Zydeco music, it taught me that hot sauce is not something to be afraid of. I was recently challenged to use Texas Pete Hot Sauce to create a unique recipe. Of course, my mind instantly flew to all the delicious Cajun food I had in Louisiana and how the extra heat added flavor. So, I decided to come up with a Cajun inspired omelette that we could enjoy in the mornings.

What I found is that the hot sauce added a bold new flavor that I would not have been able to accomplish in the omelette otherwise, and even though I used a good bit, it wasn't so spicy that everyone in the family couldn't enjoy it. Spicy Cajun Style Omelette Recipe

Ingredients:



3 Eggs
1/4 of an Onion chopped
1/4 of a Red bell pepper chopped
1/2 a link of andouille sausage
1/2 tsp. Cajun seasoning
1 tbsp. Texas Pete Hot Sauce
Butter or oil
Salt and pepper to taste

Instructions:

Step 1: Place oil in the bottom of a skillet (I use cast iron) and cook chopped vegetables over medium heat for about 4 minutes.


Step 2: Add half a link of andouille sausage chopped into small pieces to the skillet with the vegetables, and cook for an additional 2 minutes.


Step 3: In a bowl, whisk together 3 eggs, Cajun seasoning and Texas Pete Hot Sauce.


Step 4: Add the egg mixture to the skillet and cook until well browned on the bottom and little liquid remains on the top.


Step 5: Carefully fold your omellete over in half and remove from the pan.

Step 6: Garnish with a bit of cheese if you like, and serve.
