We love beef in this house. With four growing boys who threaten to eat me out of house and home, we cook plenty of meals with beef to keep them full longer. I've teamed up with Mom Central and the Beef Checkoff to help spread the word about the benefits to eating beef, and to share this delicious Asian Marinated Skirt Steak recipe too.
About The Beef Checkoff
What is The Beef Checkoff? Well, if you've listened to the radio, you've likely heard their commercials. The first time I heard about them is last year on our 50 day road trip across the Southwest, we heard the commercials quite a few times while driving. The Beef Checkoff is an organization formed in 1985 by America's ranchers and cattle farmers as part of the Farm Bill.
Together, this organization uses funds to help fuel research and promotion efforts that are aimed at raising national and international demand for beef.
Why Beef?
We all know that beef contains protein, but did you know that is just one of the 10 essential nutrients found within most beef cuts? Others include B6 and B12, Niacin, Rioflavin, Zinc and Iron. In fact, a 3-oz. serving of lean beef contains 25g of protein, that is nearly half of your recommended daily intake!
Want to hear something amazing? Based on a recommended serving of 3 ounces, Top Sirloin contains 5 grams of total fat and a Skinless Chicken Thigh contains 7 grams of total fat. So, if you've been skipping that steak for skinless dark meat chicken, you might want to think twice.
Asian Marinated Skirt Steak
I found out about skirt steak years ago on a trip to the Animal Kingdom in Disney World. Yak and Yeti has the most amazing marinated skirt steak there. While I couldn't replicate it, I did take one of my mom's favorite meat marinades and applied it to a skirt steak here at home. Due to all of our camping, I am more than familiar with our camping grill, so I grilled up the meat to a medium rare, and served it over a bead of spinach with tomatoes.
Ingredients:
2 lbs. skirt steak
3/4 c. soy sauce or coconut aminos if you want to make a Paleo version
1/4 c. lemon juice
2 bay leaves
Instructions:
Step 1: Mix together soy sauce/coconut aminos, lemon juice and bay leaves in a casserole dish. Here is where it becomes a matter of personal taste. Taste the marinade if it is too sour for your liking, feel free to add more soy sauce or coconut aminos.
Step 2: Add the skirt steak to the marinade in the casserole dish, cover and refrigerate for at least two hours, but overnight is better.
Step 3: Place meat on a hot grill, and cook until it has reached your desired level of doneness.
Step 4: Slice and serve with your choice of sides.
