Mini Spring Sugar Cookies

Spring has pretty much sprung here in Florida. The wisteria is blooming in the front yard, and the cars are covered with a thick layer of yellow pollen. What better time to bust out the Spring themed goodies then now? These mini Spring sugar cookies are made with a small flower shaped veggie cutter that came from my bento lunch supplies, but they sell similar ones at Michael's in the cake decorating aisle as well. The boys loved them, and they would make great party favors too, in these cute mini takeout boxes I found at the Dollar Tree.

Ingredients:



1 ½ c. powdered sugar
1 c. butter
1 egg
1 ½ tsp. vanilla
2 ½  c. flour
1 ½ tbsp. baking powder
Food coloring
Sugar for rolling

Instructions:

Step 1: Preheat the oven to 375 degrees.

Step 2: Cream together the butter and powdered sugar in a mixing bowl for about two minutes.


Step 3: Add the egg and vanilla to the butter mixture and beat well for another 2 minutes.


Step 4: Sift together the flour and baking powder in a separate bowl and add to the wet mixture. Mix well for several more minutes.


Step 5: Divide the cookie dough into three separate bowls and add food coloring to create Spring colors. We created pink, blue and yellow colors, but you could do others if you like.


Step 6: Roll dough into small balls a little smaller than the size of a quarter and roll in some white sugar before placing on a tin foil lined cookie sheet. Press the ball of dough flat into a circle shape once it's on the tray. 


Step 7: Bake in the oven for 6-8 minutes, checking to make sure the edges do not brown too much, but the dough is cooked through.

Step 8: Remove the cookies from the oven and place on a cloth on the counter to cool. 


Step 9: When the cookies have had a few minutes to cool, but are still warm, use the small Spring themed cookie cutter to cut small cookie shapes from them. You do not want to wait until the cookies have completely cooled to do this because they will harden and break when you try to use the cookie cutter on them.

  11. I love the mini-ness of these! They would be perfect for hiding in plastic eggs around the home too. I just finished making some spring chocolate covered graham crackers. They were so fun to make.
