Strawberry Belgian Waffles with Homemade Whipped Cream
11:05 AMI am not one for cooking fancy breakfasts. Most of the time the boys are stuck with cereal or oatmeal. Every once in a while though, I will do something nice for them and cook them something special for breakfast. These strawberry Belgian waffles are the perfect breakfast treat and are great now that strawberry prices are coming back down again here in Florida!
Ingredients:
For Waffles:
2 Eggs
2 cup Flour
1 3/4 cup Milk
1/2 cup Vegetable Oil or Melted Butter
4 tbsp Sugar
4 tsp Baking Powder
2 tsp Cinnamon
1/4 tsp Salt
1 1/2 tsp Vanilla
Strawberry Topping:
1/2 lb Strawberries
Whipped Cream:
1 cup Heavy Whipping Cream
2 tbsp Sugar
Directions:
Step 1: Remove stems from strawberries and cut up.
Step 2: Take 1/2 of the strawberries and puree in food processor or blender.
Step 3: Preheat waffle iron.
Step 4: Separate eggs.
Step 5: Beat egg whites until they peak.
Step 6: Beat egg yolks in large bowl until smooth.
Step 7: Add flour, milk, vegetable oil, sugar, baking powder, salt, cinnamon and vanilla to egg yolks and beat just until smooth, and then fold in egg whites.
Step 8: Spray preheated waffle iron with non-stick cooking spray.
Step 9: Pour batter onto hot waffle iron and cook until golden brown.
Step 10: Put sugar into a cold mixing bowl and add cold whipping cream. Whisk until the cream gets stiff peaks.
Step 11: Drizzle waffles with strawberry puree and top with strawberries. Place whipped cream on top of waffles.
