Slow Cooker Tortellini and Chicken

Slow cooker chicken and tortellini. #crockpot #freezermeal

Okay, so I cheated  bit on this recipe and used a pre-packaged component. I had originally seen the idea for a spinach tortellini soup for the Crockpot, but the boys are not big on soups, at least ones that look like soup, so I did a little adapting to create a recipe everyone in the house could love. It was pretty tasty, so I thought I would share it with you all too.

Ingredients:

2 lb. boneless skinless chicken tenderloins
1 1/2 large packages of pre-packaged tortellini (we used a mix of chicken and four cheese)
2 cans of Italian style diced tomatoes undrained
1 box of chicken broth
A few handfuls of spinach (you can go heavier on it if you want, but the boys are picky.)

Instructions:

If freezing, combine everything in a gallon sized ziplock bag and freeze until you are ready to use.

When ready to use, remove from the freezer to defrost the night before in the fridge, and cook on high for 4 hours.

This is a recipe that does better cooked for a shorter period of time. If you cook on low for longer it will work, but the noodles on the tortellini will become a bit mushy.
