Mini Taco Bowls - Big Taste in a Tiny Package!

I love finger food. Yummy, delicious finger foods! New Years, Super Bowl and a host of other events are coming up soon, and I have been looking for new ways to dress up my favorite foods so that they can be served in delicious little bite sized servings. Like these adorable and delicious mini taco bowls. How awesome are they?

Mini Taco Bowls

INGREDIENTS



  • 1 lb Ground Beef
  • 2 tbsp Taco Seasoning
  • 6 Jalepeno Slices (optional)
  • 1 diced Tomato
  • Shredded Cheddar Cheese
  • 12 Corn Tortillas
DIRECTIONS

Step 1: Brown ground beef and drain.


Step 2: Dice the jalepenos and add to beef. You can skip this step if you want a milder version.

Step 3: Add 1/4 cup water and taco seasoning and cook over medium heat until water is absorbed. Reduce heat to low.




Step 4: Put each corn tortilla in microwave for 30 seconds to soften it up. Using a 3 inch cutter (like a jar lid) cut 2 circles from each tortilla.



Step 5: Press each circle into the cup of a mini muffin pan, folding sides as needed.



Step 6: Place in 350 oven for about 12 minutes (until tortilla is crispy).



Step 7: Place each shell on cooling rack and fill with taco meat. Top with cheese and diced tomato and a leaf of cilantro (optional).
