#Paleo Savory Cinnamon Slow Cooker Chicken
12:03 PMWhen looking for meals that I could freeze and then slip into the crockpot, it can be hard to find things that do not have prepackaged soups or sauces that are not allowed on the 21 Day Sugar Detox I am doing. For that reason, I searched out recipes I could tweak in order to create a freezer to crockpot meal that would be Paleo and Sugar Detox friendly. This cinnamon chicken recipe was adapted from one I found on iVillage and it is not sweet tasting like you might think, it is actually pretty savory.
Ingredients:
2 lb. chicken breasts (you can use legs or thighs if you prefer.)
2 Bell Peppers sliced. (I used one green and one orange.)
1 Onion diced
2 tsp. Paprika
4 Cloves garlic minced
2 tsp cinnamon
1 c. Chicken broth
1/4 tsp. Nutmeg
Step 1: Combine all ingredients in a gallon Ziplock freezer bag. Make sure all the air is out before sealing shut.
Step 2: Remove the meal from the freezer the night before serving and defrost in the fridge.
Step 3: Pour contents of the bag into your slow cooker and cook on low for 6 hours or high for 4.

ReplyDeleteYes Crystal, you need to take it out the night before and defrost it in the fridge and then just throw it in the crockpot.

ReplyDeleteI love using my crock pot but have only cooked chicken in it once. I didn't like the texture of the chicken afterward, but I think I'll try it again and this recipe sounds very tasty. Thanks.
ReplyDeleteAnne, it is easy to overcook meat in a crockpot. A lot of people think that the longer you cook it the more tender it will get. That is true, but tender does not equal juicy. In many cases the meat comes out tender but very dry and loses its consistency. I will put up a post tomorrow with tips on how to keep the meat from drying out.

ReplyDeleteI threw in a bag of shredded cabbage as my partner isn't paleo, but I figured the shredded cabbage as some sort of noodle replacement!

ReplyDeleteWith a Crockpot, increasing the amount should not increase the cook time. I would definitely recommend checking the internal temperature before serving, but depending on the settings of your Crockpot, it should be fine at the original time setting.
DeleteCan you just make this and throw it into a crock pot without freezing/defrosting or do you find that the freezing makes a difference (sometimes, it does)? Thanks!
ReplyDeleteYou could definitely just throw it straight into the Crock-Pot. I only freeze them because I make a bunch ahead of time.
