Greek Lemon Slow Cooker Chicken

Remember that chicken I was raving about on the Facebook page the other day? This is it! Yum! It is so delicious, tender and juicy, the only problem we had with it is there wasn't nearly enough. The boys ate like it was their last meal and every crumb was gone by the time dinner was over. No leftovers for lunch for me. It is a delicious blend of flavors and I would love for you to try it. Like the other freezer to crockpot meals this month, it is Paleo and sugar detox friendly, but anyone can enjoy it.

Ingredients:

2 pounds of chicken drumsticks (Use drums or thighs for this, as breasts seem to get too dry.)
1/2 cup olive or coconut oil.
1/2 cup chicken or vegetable stock (no sugar)
2 lemons
1 onion slice
2 cloves garlic
1/2 tsp rosemary
1/2 tsp paprika
salt and pepper to taste

Instructions:

Step 1: Combine all ingredients in a ziplock freezer bag. Squeeze the juice from the lemons in the bag and then just leave the whole lemon peel in the bag to marinate. Make sure all the air is out of the bag before zipping and freezing.

Step 2: Take the bag from the freezer the night before serving and defrost in the fridge.

Step 3: Place the entire bag of contents in the crockpot and cook on high for 4 hours.

This goes really well with some spicy steamed cabbage, but you can serve it with almost anything.

  1. I never use my slow cooker, it collects dust. I would totally try this recipe... it would probably end out in my dutch oven though...lol

  2. LOL Robin. I am sure it would taste just as good no matter how you cooked it. Crockpot meals are just easier for me with the schedule of picking up two groups of boys, homeschooling and everything else. It is a guarantee that we don't eat out all the time.

  19. For me t didn't come out good at all. Maybe ibecause I cooked it on low for 8 hours? The chicken was chewy and bland.
