Slow Cooker Sausage with Onions and Peppers
11:22 AMLast night we busted out another one of the freezer to crockpot meals that I had made in the 25 meals in 4 1/2 hours series. This slow cooker sausage with onions and peppers is not only colorful, but delicious too. It received two thumbs up from every member of the household, even the smallest and pickiest of them all. It's also a very simple recipe, which is an added bonus. Give it a shot and let me know what you think!
Ingredients:
1 lb. package Eckrich turkey smoked sausage
1 package Aidell's apple and chicken sausage (I mix these two sausages because this one is really expensive.)
1 each sweet green, red and yellow peppers chopped
1 medium onion chopped
1/2 cup chicken or beef broth
Step 1: Chop your peppers and onions and add them to a labeled freezer bag.
Step 2: Slice each package of sausage into bite size pieces and place into the freezer bag.
Step 3: Freeze and defrost in the fridge the night before serving.
Step 4: Place in the slow cooker for 4 hours on high. Add a 1/2 cup of chicken or beef broth for a flavorful sauce to pour over rice. Serve with rice and a salad.
