Crockpot Cowboy Casserole

A few months ago I found a recipe for Cowboy Casserole on Moscato Mom and I made it for my family. They absolutely loved it. So, when I was looking for meals that could go from the freezer to the crockpot, I decided to focus on ones we already loved. With a few tweaks that better fit our family's needs and the transition from freezer to crockpot cooking, I cam up with a process that turned this family favorite into a slow cooker hit! This meal does not photograph well, but I promise you it tastes amazing.

Ingredients:
  • 2 lbs. ground beef or turkey
  • 1 onion chopped
  • 1 tbsp garlic powder
  • 1 can of sweet corn
  • 1 can cream of chicken soup
  • 2 cups 2% shredded cheddar cheese
  • 1/2 cup skim milk
  • 1/2 cup fat free sour cream
  • 1 large bag frozen tater tots
Step 1: Brown meat in a pan with the onions and garlic powder. 

Step 2: Mix all remaining ingredients besides the tater tots and place them in a freezer bag. 

Step 3: Let the meat mixture cool completely and then place in the freezer bag as well.

Step 4: Freeze the meal and remove to defrost the night before serving.

Step 5: Line the bottom of your crockpot with the tater tots and pour the contents of the freezer bag over them. Cook on high for 4 hours or low for 6. You can add some fresh cheddar cheese to the top the last 30 minutes of cooking if you like. Serve with salad.

  7. I would have to substitute chicken for the turkey b/c my mom (who we eat with quite often LOL) is allergic but it sounds so tasty.

  8. I made this with ground beef and my kiddos LOVED it. I have four picky boys and there wasn't any left. BUT, my boys also eat a lot and managed to fill up on this. It makes quite a lot of food.

  9. Is it ok to take the hamburger out of the freezer, cook it according to this recipe then refreeze the meal?

  10. Yes, you can use frozen hamburger meat cook it and then refreeze as instructed. :)
