4 Ingredient Almond Shortbread Cookies

I love shortbread cookies. For some reason though, I had it in my head that they would be hard to make and so, I never tried. I decided to look up some recipes the other night though because I had a pregnancy craving for something sweet and no dessert in the house. The recipe below was adapted from a few of the recipes I found to create a simple 4 ingredient almond shortbread cookie recipe.

Ingredients:

1 cup softened butter (no margarine or spread)
1 tsp. almond extract
3/4 cup powdered sugar
2 1/4 cups flour

Step 1:

Preheat the oven to 350 degrees.

Step 2:

Place the softened butter, almond extract and powdered sugar in a blender and mix well.

Step 3:

Slowly add in flour to the sugar and butter mixture a little at a time. Trust me, you do not want to put it all in at once. By now it should be the consistency of Playdoh. If it is too soft, add some more flour, and if it is too dry, add a little more butter.

Step 4:

Roll the dough out thin  on a floured counter surface and cut into circles using a cup or cookie cutter. Place on an ungreased cookie sheet and bake for 15 minutes.

  11. I made these without reading the recipe properly and used 1 cube of butter instead of 2. I couldn't figure out why the dough wouldn't stick so I added half and half until it stuck together. Not quite the same but still a good cookie. I'll have to read the recipe properly next time...lol
