Bacon Topped Mini Meatloaf Recipe
7:30 AMMy kids love meatloaf and so do I. There is always a standard meatloaf recipe that I always use. Actually, it isn't a written recipe, my dad just taught it to me growing up. I do like to try and mix it up every once in a while though. When I read about bacon wrapped meatloaf earlier this week, I decided to take that concept and blend it with the mini lasagna idea that I used for another recipe and the result was a delicious portion sized bacon topped mini meatloaf that the kids snarfed down!
Ingredients:
1/2 cup diced green pepper
1/2 cup diced sweet onion
3/4 cup bread crumbs
1 egg
2 tbls. ketchup
1 lb. ground turkey
salt, pepper and garlic powder to taste. {I just use a few shakes of each}
4 slices of maple flavored bacon {cut into thirds}
Extra ketchup for topping.
Step 1:
Grease a 12 cup cupcake tin with cooking spray. Preheat the oven to 350 degrees.
Step 2:
Combine the first five ingredients together in a mixing bowl.
Step 3:
Add the ground turkey to the ingredients in the mixing bowl and mix thoroughly with your hands.
Step 4:
Form small balls from the meatloaf mixture and pat down into each cupcake tin. They just need to fill each tin and be about level with the top.
Step 5:
Top each mini meatloaf with a few dabs of ketchup and one of the bacon pieces.
Step 6:
Bake in a 350 degree oven for 25-30 minutes. The mini meatloaves should pop right out and there should be minimal grease since the recipe is made with ground turkey.
