Healthy Fall and Winter Snack - Baked Chickpeas Recipe
10:00 AMI am not a lover of rabbit food. I love vegetables, but only when they are cooked and I am not a big fan of fruit on a daily basis either. When I was looking for healthier snacking options that would mimic some of my favorite snacks, I ran across a cooking show on The Food Network that was featuring a recipe for baked chickpeas. I adapted that recipe to meet my own needs and tastes and the recipe below is what I came up with. These are an awesome alternative to crispy chips and crackers and you don't have to feel guilty about eating them!
Ingredients:
One can of drained and rinsed chickpeas
2 tbs of extra virgin olive oil
2 tsp cumin
2 tsp garlic powder
1 tsp onion salt
1 tsp. paprika
pepper to taste
pinch of cayenne pepper
Instructions:
1. Rinse and drain the chickpeas. Let them dry and then set aside.
2. Combine olive oil and spices in a mixing bowl.
3. Add chickpeas to the mixture and toss until coated.
4. Place chickpeas on a cookie sheet and place in a 425 degree oven for 30 minutes or until crispy and golden brown.

Oh yum! This looks so tasty, and healthy too! I'm always looking for a healthy alternative, and this definitely fits the bill.
