Microwave to Martha Stewart - Day 8 Creamy Chicken Casserole

Well, the challenge is rolling along slowly but steadily. Today I am offering up a recipe for a creamy chicken casserole. This is a simple recipe that turned out delicious and everyone in the house gobbled it up! Some members of the family may or may not have picked out the veggies though. I plead the fifth. Ingredients:

3 cups of rice
1 1/2 cups broccoli florets
1 1/2 cups sliced carrots
1-1 1/2 cups chicken
1/2 cup skim milk
1 can cream of chicken soup
2 cups shredded cheddar cheese
onion powder
salt/pepper to taste
1/2 cup bread crumbs
1 tbs. light butter

Instructions:

1. Prepare rice, chicken (I did mine in a crock pot) and vegetables. Sprinkle a tablespoon or so of onion powder on the rice.


2. Mix together rice, vegetables, chicken, soup, milk, salt and pepper to taste and cheese in a large bowl and then transfer to a casserole dish.



3. Melt butter in the microwave and mix in a bowl with the bread crumbs. Stir until the buttered bread crumbs are separated and able to be sprinkled on the casserole.


4. Place casserole dish in preheated oven set at 350 degrees and bake for 30 minutes or until bread crumbs are golden toasted on top.



I sprinkled some Parmesan cheese onto the top of mine, but that is entirely optional and was done mostly to make it a bit more appealing to the boys.
