My time in Louisiana a few weeks ago taught me more than just the history of the area and the difference between Cajun and Zydeco music, it taught me that hot sauce is not something to be afraid of. In fact, I saw by eating the amazing food I found there, that hot sauce is so much more than a condiment, it can be a secret ingredient that gives food a little kick, and makes it that much more delicious.

I was recently challenged to use Texas Pete Hot Sauce to create a unique recipe. Of course, my mind instantly flew to all the delicious Cajun food I had in Louisiana and how the extra heat added flavor. So, I decided to come up with a Cajun inspired omelette that we could enjoy in the mornings.

What I found is that the hot sauce added a bold new flavor that I would not have been able to accomplish in the omelette otherwise, and even though I used a good bit, it wasn't so spicy that everyone in the family couldn't enjoy it. Texas Pete doesn't just carry hot sauce either, they have a whole line of sauces that can help add new flavors to your dishes, including sriracha sauce, green pepper sauce, garlic hot sauce, and wing sauces. Step 2: Add half a link of andouille sausage chopped into small pieces to the skillet with the vegetables, and cook for an additional 2 minutes.

Step 5: Carefully fold your omellete over in half and remove from the pan.

Step 6: Garnish with a bit of cheese if you like, and serve.
